Fun Sushi For Kids: Hawaiian BBQ Recipe


Please welcome, my friend Laura of Kodomo Sushi. Today she shares a fun recipe for kid-friendly Hawaiian BBQ Sushi. Welcome Laura!

Today's recipe is for Hawaiian BBQ Chicken Sushi. I have a few tools to make sushi in a variety of shapes, but you can easily make this with just a bamboo sushi mat if you wish.


HAWAIIAN BBQ SUSHI RECIPE

What You'll Need:
  • 2 chicken breasts (or 3 chicken thighs or 1 large turkey breast)
    1/3 large orange bell pepper chopped (or 1/4 c crushed pineapple rinsed/drained)
    Hawaiian BBQ Sauce (or teriyaki sauce)
  • Prepared Sushi Rice
  • Sushi Mold or Bamboo Sushi Rolling Mat
In the pictures you'll see the chopped orange bell peppers I used. If you already know this is not going to go over well at your table, change it up. Use pineapple instead!

*If you're using pineapple, make sure you've rinsed and drained it really well and blotted out any excess moisture with a paper towel. If the ingredients rolled/pressed into the sushi are too wet the sushi won't hold together.

How to:
  • Take your chicken and toss it in a food processor for about 30 seconds or so, enough to make sure it's finely chopped.
  • When you're finished transfer it to a bowl, and add just a teaspoon (to start with) of the Hawaiian BBQ sauce. You don't want the chicken too wet, so we're only adding enough to add flavor to the meat and make it a little sticky. If you find the chicken is still too dry or doesn't have enough flavor add a little more.
  • Next add in your orange bell pepper and mix well.
  • Prep your mold by lining plastic wrap inside. Press in your sushi rice to cover the bottom and sides of the mold. Next fill the middle of the roll with your bbq mixture, and top with rice. Make sure you use enough rice, but not so much that you'll overfill once you press the rice down with the top of the mold.
  • Use the plastic wrap to pull your sushi out of the mold once pressed.
  • Now you're ready for slicing! Make sure you have a VERY sharp knife, and after every other slice wipe your knife off with a wet rag.
Once sliced, your sushi is ready to be served! I like to add a little more of the Hawaiian BBQ sauce to a dish for dipping.

I like to make this using grilled chicken. Whenever we grill, especially chicken, we always grill extra so I have some to use through the rest of the week. I think the grilled flavor goes great with the teriyaki sauce that's added.
