This simple pasta sauce dinner recipe is great for families who are looking to save money or want a fresh easy alternative to store brand tomato pasta sauce. It's always a hit with my husband and kids. My kids aren't big sauce lovers, so it's also perfect for any family that has different palates.
- 2-3 medium to large ripe tomatoes (or more as desired)
- 2 tbsp virgin olive oil
- Your favorite pasta noodle: Spaghetti, Angel Hair, Penne, etc. (Although it's light texture pairs excellently with angel hair and thin spaghetti)
Dice 2-3 tomatoes or as many as desired, set aside.
Heat a skillet or low sauce pan on medium.
Add 2 tbsp olive oil.
Add diced tomatoes.
Sprinkle with salt and pepper to taste.
Sprinkle with fresh minced garlic (or garlic powder) to taste.
Cover and heat through until the tomatoes are nice and soft and it starts to look like a sauce, stirring occasionally.
Pour over pasta and enjoy!
