Welcome to Day 13 of 30 Days of muffin tin meals for kids. I thought it would be fun to show you one of my most favorite muffin tin meals to make:
"Make Your Own" Muffin Tin Pizza Toppings.
Green peppers, diced ham, swiss cheese, marinara sauce, portobello mushrooms, and fresh tomatoes.
We layered marinara and swiss cheese over sandwich bread rounds and added toppings (No making dough necessary). My favorite was the swiss and mushroom....the kids not so much. But this is one of the only times I have ever introduced mushrooms into their food. They always turn their nose up at them because of how they look. I hear mushrooms are a "love it or hate it" thing. I wouldn't know because I have always loved mushrooms, since I was a little girl.
Did you know that September is National Mushroom Month? When I visited MushroomInfo.com to browse recipes for this post, I checked out the nutrition section. I had no idea this little versatile vegetable is surprisingly full of nutrition!
We had fun creating all different combinations of pizza toppings. I am hoping that the kids will learn to love mushrooms as I do. Until then, I will happily take their servings for myself! ;)
