Butternut Squash Soup

Ingredients
1 whole butternut squash
1 white onion
1 whole ginger root
1 can chicken broth
salt and pepper to taste
Directions:
skin and shred ginger root
cut squash into chunks (skin on or off, you decide)
cook squash in microwave for about 4 minutes
while that's cooking, saute onion and ginger root at medium heat on stove
put all in a blender or food processor and puree.
warm on stove.
serve with croutons
makes 4 servings
**I have not tried this recipe yet, but it looks super simple!
