Michelle's Chicken Salad

This is the first recipe I can actually claim as my own. I have taken the traditional Chicken Salad (maybe it's not that new)added some goodies and it is one of Coach's favorites. It's Easy Peasy simply because I use virtually no measurements and aside from keeping the may and the chicken, you can add or delete ingredients to your taste.

~1 Lg. cooked cubed chicken breast (one makes enough for two sandwiches)
~1/2 to 1 cup Mayonaise (the real stuff, not miracle whip)
~Mustard (just a drizzle)
~Pickled Relish (small spoonful)
~Salt and Pepper (to taste)
~Lemon Juice (7-10 drops-lime tastes great too!)
~Granulated Garlic (several dashes or fresh, granulated, g salt, or however you roll)

Add-ins: Shredded cheese, chopped apple pieces or cut up grapes

Combine cubed chicken, mayo, mustard, and relish in a med. size bowl. Stir once or twice, then add the rest of the ingredients and mix well. I add the cheese and apples every time, unless I don't have them on hand.

Makes enough for two sanwiches
Serve on lightly toasted bread for an excellent sandwich!

Tips and Tricks:

I use only cubed (grilled or baked) chicken breast. I cube it very small. I prefer it's texture to shredded or larger pieces. I also love to use left over grilled chicken breast-it cuts down on time. The garlic and lemon juice are my not-so-secret ingredients. Some recipes I know of use water chestnuts, but I think apples provide the same texture and I prefer their sweetness. I go easy on the mustard, but Coach likes it heavy.

So there it is. Hope it doesn't sound too complicated. You really can't mess it up if you add too much or too little of an ingredient.
