Easy Paleo Lettuce Wraps Recipe

One of the hard parts of switching your lifestyle to a more "clean" way of eating is finding wonderful recipes and not getting into a rut. Fortunately there is a fantastic online community for Paleo and Whole30 recipes…a world of amazing healthy foods at our fingertips.

The wonderful thing about lettuce is that you can add anything to it and it will be delicious! I decided to make lettuce wraps or “tacos” my girls called them. I found baby romaine lettuce leaves at our local store…perfect! With that I cut up some bell peppers and mini cucumbers. I added pre-shredded organic rosemary ham and some grape tomatoes on the side. Load up a lettuce leaf with meat and veggies, fold like a taco and voila…a healthy delicious meal quick and easy.

Paleo Lettuce Wraps

Baby romaine leaves, rinsed 
Bell Pepper slices
Cucumber slices
Organic Rosemary ham, shredded
Grape tomatoes (on the side)

*Wrap meat and veggies inside individual lettuce leaves for a super delicious paleo lunch

This super tasty lunch was so fast and easy! Between my daughters cheer practice three times a week, riding lessons and running my own small business our life is crazy busy. It is nice when you can grab food from your fridge and make a filling meal in 5 minutes.
