The wonderful thing about lettuce is that you can add
anything to it and it will be delicious! I decided to make lettuce wraps or
“tacos” my girls called them. I found baby romaine lettuce leaves at our local
store…perfect! With that I cut up some bell peppers and mini cucumbers. I added
pre-shredded organic rosemary ham and some grape tomatoes on the side. Load up
a lettuce leaf with meat and veggies, fold like a taco and voila…a healthy
delicious meal quick and easy.
Paleo Lettuce Wraps
Baby romaine leaves, rinsed
Bell Pepper slices
Cucumber slices
Organic Rosemary ham, shredded
Grape tomatoes (on the side)
*Wrap meat and veggies inside individual lettuce leaves for a super delicious paleo lunch
This super tasty lunch was so fast and easy! Between my daughters cheer practice three times a week, riding lessons and running my own small business our life is crazy busy. It is nice when you can grab food from your fridge and make a filling meal in 5 minutes.
This looks like the perfect summer meal!
